Shoulders are working body parts of a lamb, with bone, fat and different muscle group within. Therefore, if cooked incorrectly, the meat could be tough.
We recommend taking 5 minutes to research cooking methods and times, but as a guide, we think that the following video will give a good idea on how to get the best out of a fantastic cut of lamb. We particularly like the second method, although maybe we would cook the steaks for a bit longer on a lower heat.
